Ice-cream party

Grow your own Candy Cane

Strawberry Mint Mojitos mmmmm

Its starting to warm up here in sunny Perth and these look just the thing to enjoy with some friends on a summers evening.



 
To make the strawberry mint mojitos you will need:
 
-Fresh Strawberries, large punnet
-Mint leaves
-Soda water
-Rum
-Limes
-Sugar or truvia

First gentle squash the strawberries with the sugar then add to your pitcher. (if you have a pestle and mortar this works a treat!)
Next, slice limes and trim your mint leaves. Squash or gentle bash the mint leaves with lime juice.
Add to pitcher. (You will want to make extra batch so you can easily just add to pitcher when you run out.)
To finish, add 1 cup of rum, 3 cups of soda water and ice. Taste it to make sure it tastes okay. You may need to add more soda, rum or lime juice depending on your taste.
Garnish the glasses with mint leaves and sliced strawberries and then stuck them in the freezer for 15 minutes to get a frosty glass.

Teeny Tiny Gingerbread houses

How cute are these little guys? I think we may even give it a go a little closer to Christmas, they would make cute pressies for the kids at school.
 
 
 
 
 
 
 
 
Mini Gingerbread Houses
Ingredients:

500g flour
200g honey
120g caster sugar
120g margarine or butter
1 egg
1 teaspoon baking soda
1 package( 20-25g) of gingerbread spice or 3-4 teaspoons homemade gingerbread spice

Directions:

Mix flour with baking soda.  In a pot heat: honey, sugar and gingerbread spice until the mixture will become more liquid. Set aside so it cools slightly. Pour warm honey into the flour. Then add butter diced into cubes and an egg. Mix thoroughly with a spoon and then knead with your hands to smooth dough. Shape into a ball and wrap in cling film. Put the dough into the refrigerator  to "rest" for 5-10 minutes.

When the time passes, remove the dough from the refrigerator, split in half, re-wrap one part in a cling film.  Second part roll with little bit of flour (or between two sheets of foil) till 4-5mm thick and cut out any shape you want. If you want to cut out mini houses roll the dough to a thickness of 2-3mm and then use the template provided to cut out all needed parts. Do the same with the second part of the dough.

Preheat your oven to 180 C. Place gingerbreads on a flat baking tray lined with baking paper or silicone mat keeping the distance. Before you start baking you can spread gingerbreads with beaten egg and decorate with nuts or dried fruits. Don't do anything for gingerbread houses.

Bake 7-9 minutes according to the thickness and the size of your gingerbreads. 4-5 minutes should be enough for mini houses. Gingerbreads should be slightly gold. The darker the colour, the harder your cookies will be. Store in an airtight container, up to a few weeks. If they become too hard:  remove cookies from the tin day before serving.

Building houses:

Cold parts of houses glue together with royal icing. Ready gingerbread houses set aside for a few hours to dry and then decorate. Keep in a tightly closed container.

Christmas Traditions

I love a Christmas traditions and this is one of my favourites! Both my girls love to read, so on December 1 when the tree goes up there will be 25 books placed under the tree, one for every day till Christmas. Because of the age difference I have gone for 1/2 each.

Christmas stocking for the resident fur baby

I'm not sure about you but my eldest baby is an old rather silly cockerspaniel who is now getting on in age but is never left out at Christmas!! These burlap bone stockings are perfect and wouldn't be too hard to put together. Just remember not to put anything in it till the last minute or Christmas may come early to your fur baby!!

Strawberry Picking

Last week I took the girls Strawberry Picking, they had a blast and while pretty grubby by the end, the trip home was focused on Madam 4&1/2 deciding on what we were going to do with all those strawberries!!




I popped some pics on facebook and have had a huge amount of emails with regards to what I did with them. So here is the list and I apologise to anyone who does not have a Thermy because that is what I used but with most recipe's they don't seem to hard to do in another machine, I am certainly not doing anything fancy pants!!
 
Strawberry Leather
Ingredients
  • 1 punnet strawberries
  • 1 tablespoon, castor sugar (optional)
Instructions
  1. Preheat oven to a low temperature (mine is around 80 fan forced)
  2. Line a baking tray with baking paper
  3. Remove the leaves from the strawberries
  4. Place strawberries and sugar into any machine that will puree them and blitz until strawberries are smooth
  5. Pour strawberry puree onto baking tray - **Make sure it is spread evenly or the thinner sections burns and after having them in the oven for 3-4 hours your pretty pissed!
  6. Place in oven and cook for 3 hours or until the mix is dried and not sticky
  7. Chop into desired size and place in an airtight container
 
Apple and strawberry puree & Blueberry and strawberry puree (I have used this to mix with yoghurt, as ice lollies for the girls, I have frozen cubes for latter and even put some over ice-cream!)
 
Apple and strawberry puree
  • 3 Red Apples – or sweet apples
  • 20 strawberries
  • 100ml water
  • Peel and core apples then chop into small pieces.
  • Hull strawberries and cut in half.
  • Place Apple into TMX bowl – Add 100ml of water
  • Cook 100 degrees for 10 minutes on speed 1.
  • Check apples are cooked to your liking, add strawberries
  • Puree for 20 seconds on speed 9.
Blueberry and Strawberry Puree
  • 2 cups of frozen blueberries
  • 2 cups of strawberries
  • Place Blueberries into TMX bowl
  • Cook 100 degrees for 2 minutes on speed 1.
  • Add Strawberries and puree for 20 seconds on speed 9

Strawberry Sorbet

75g sugar
150g strawberries                                                                                                                                                                          
350g ice                                                        
water                                                                                   
                                                                                   
  1. Process the sugar on Speed 9 for 10 seconds.
  2. Add the strawberries and ice. Slowly move the dial from Speed 1 to 10 until the mixture is smooth. This will take about one minute.
  3. Add water as necessary to keep the blades spinning. 
Strawberry Muffins (I made these as mini muffins so I could freeze them and use them as lunch box treats!)
 
 
 
  • 220 g Self-Raising Flour ( I used gluten free)
  • 90 g Vegetable Oil
  • 130 g Buttermilk or Plain Milk
  • 170 g Caster Sugar
  • 1 Egg, lightly beaten
  • 1 Tsp Vanilla Extract
  • 150 g Strawberries diced and 75g of choc chips
How to prepare strawberry Muffins
 
Preheat oven to 180°C.
Prepare muffin tins (lightly butter/oil or place muffin cases).
Placed all ingredients into TM bowl. Mix for 20 Sec. on Speed 4.
Add strawberries and choc chips Mix in Reverse. 20-30 Sec. Speed 1.
Place in tins and bake for 15-20 Min. or until lightly browned.
 
Strawberry Cake
I am not really a cake person but my husband loved this! He thinks next time I should cut it half and put some strawberry jam in the middle!!
  • 100g grapeseed oil
  • 250g fresh strawberries (leave the leaves on)
  • 200g natural yoghurt
  • 150g caster sugar
  • 2 large eggs
  • 300g Self Raising Flour (again I used gluten free no dramas!)
Preheat oven to 160 deg and line a large loaf tin or cake tin.
Add strawberries to the bowl and blitz on Speed 7 for 5 seconds.  Add oil, yoghurt, sugar and eggs and mix on Speed 7 for 10 seconds.  Scrape down sides and repeat if necessary.
Add flour and mix on Speed 5 for 10 seconds, scrape and repeat if necessary.
Pour into the cake tin and bake for 40-50 minutes or until a skewer comes out clean.
Top with vanilla buttercream.
