Last week I took the girls Strawberry Picking, they had a blast and while pretty grubby by the end, the trip home was focused on Madam 4&1/2 deciding on what we were going to do with all those strawberries!!
I popped some pics on facebook and have had a huge amount of emails with regards to what I did with them. So here is the list and I apologise to anyone who does not have a Thermy because that is what I used but with most recipe's they don't seem to hard to do in another machine, I am certainly not doing anything fancy pants!!
Strawberry Leather
Preheat oven to a low temperature (mine is around 80 fan forced)
Line a baking tray with baking paper
Remove the leaves from the strawberries
Place strawberries and sugar into any machine that will puree them and blitz until strawberries are smooth
Pour strawberry puree onto baking tray - **Make sure it is spread evenly or the thinner sections burns and after having them in the oven for 3-4 hours your pretty pissed!
Place in oven and cook for 3 hours or until the mix is dried and not sticky
Chop into desired size and place in an airtight container
Apple and strawberry puree & Blueberry and strawberry puree (I have used this to mix with yoghurt, as ice lollies for the girls, I have frozen cubes for latter and even put some over ice-cream!)
Apple and strawberry puree
3 Red Apples – or sweet apples
20 strawberries
100ml water
Peel and core apples then chop into small pieces.
Hull strawberries and cut in half.
Place Apple into TMX bowl – Add 100ml of water
Cook 100 degrees for 10 minutes on speed 1.
Check apples are cooked to your liking, add strawberries
Puree for 20 seconds on speed 9.
Blueberry and Strawberry Puree
2 cups of frozen blueberries
2 cups of strawberries
Place Blueberries into TMX bowl
Cook 100 degrees for 2 minutes on speed 1.
Add Strawberries and puree for 20 seconds on speed 9
Strawberry Sorbet
75g sugar
150g strawberries
350g ice
water
Process the sugar on Speed 9 for 10 seconds.
Add the strawberries and ice. Slowly move the dial from Speed 1 to 10 until the mixture is smooth. This will take about one minute.
Add water as necessary to keep the blades spinning.
Strawberry Muffins (I made these as mini muffins so I could freeze them and use them as lunch box treats!)
How to prepare strawberry Muffins
Preheat oven to 180°C.
Prepare muffin tins (lightly butter/oil or place muffin cases).
Placed all ingredients into TM bowl. Mix for 20 Sec. on Speed 4.
Add strawberries and choc chips Mix in Reverse. 20-30 Sec. Speed 1.
Place in tins and bake for 15-20 Min. or until lightly browned.
Strawberry Cake
I am not really a cake person but my husband loved this! He thinks next time I should cut it half and put some strawberry jam in the middle!!
Preheat oven to 160 deg and line a large loaf tin or cake tin.
Add strawberries to the bowl and blitz on Speed 7 for 5 seconds. Add oil, yoghurt, sugar and eggs and mix on Speed 7 for 10 seconds. Scrape down sides and repeat if necessary.
Add flour and mix on Speed 5 for 10 seconds, scrape and repeat if necessary.
Pour into the cake tin and bake for 40-50 minutes or until a skewer comes out clean.
Top with vanilla buttercream.
